Chow-chow (Green Tomato Mustard Relish)

When I see green tomatoes in the market, I can't help but pick up a few. It's rare I fry anything so fried green tomatoes don't happen, but this relish does. A pint goes into the fridge to be eaten with a good piece of cheddar or on top of a hotdog if the mood strikes.

This makes about 2 pints. It lasts about 6 months in the refrigerator. And it must be refrigerated. This isn't canned.


Add more or less of any vegetable.


Toss 1/4 cup sliced green beans,1/4 cup chopped cabbage,1 small carrot, diced, 1/4 cup diced red bell pepper, 2 small green (hard) tomatoes, diced with 2 T kosher salt. Let rest over night, then drain and rinse. 


To a bowl add 1 T cornstarch, 2 tsp turmeric, 1 tsp yellow mustard seeds, 1 tsp crushed coriander seeds, black pepper and 2 T mustard powder.


Add the vegetables to a bowl and set aside.


Whisk in 2 T malt vinegar and 2 T white vinegar to make a slurry

Simmer 1 1/2 cups of water with 1 T kosher salt and 1 tsp sugar.  Slowly add in the cornstarch slurry

While hot, pour the over the vegetables, toss and add to 2 pint jars.


Seal and refrigerate for a week before using.
