Jicama and Orange Salad with Pomegranate


I made a short video and posted this recipe to tiktok. You can listen to the narration there. (My voice gets weirdly deep at one point. So funny!) This serves four as a side dish. It's also vegan, gluten free and takes no more than 10 minutes to make.


Peel and cut one large jicama. Toss with segments from 2 medium oranges. (You can just cut them up! Don't feel like it has to be supremed) Taste one segment to see how sweet it is.


Add 2 T of the orange juice, some of the zest (no more than a T), 2 T olive oil, 1 tsp lime juice, 1 tsp of sumac, salt and some parsley leaves.


Toss, taste and add more lime, salt or olive oil as needed.





Garnish and a scattering of pomegranate seeds and serve.
