Do you love making soup? Do you have a favorite kind? I sometimes think I do and then I realize that's crazy talk. There are no favorites in soup. It's all good, good, goodness.
This is a very old-school sweet and sour cabbage soup that speaks to my very soul. It's for sure sweet, and for sure tangy. The caraway adds a hint of that toasty rye warmth that rounds everything out.
When I make this I serve it with a bit of bread, and leave the potatoes until the last bites, so I can smash them up and pile it on the bread. That's living.

Sweet and Sour Cabbage Soup
This makes 4-6 servings
In a soup pot, heat 2 T olive oil.
Add two onions large dice. Saute for 2 minutes, stirring often. Let them get transparent but not brown.
Add 1 T caraway seeds (to taste) along with 2 large diced carrots, 3 stalks of celery, sliced and 4 small white potatoes cut into wedges. Top with one large head of cabbage, diced.
Add 2 cans of chopped tomato with the liquid and 2 cups of water. Let simmer.Add 1/2 cup brown sugar and 1/2 cup apple cider vinegar.
Taste. It should be strong. Add more vinegar and sugar as needed.
Simmer until the cabbage is wilted.Serve with a splash of olive oil and some toast.
