Masala Spiced Lucky Carrots & Black Eyed Peas

It's 2021! Time to cook, rejoice and devour

There are so many ways. You could make this dish. It combines several good-luck foods is a simple, warm way to start your new year.

For me, the carrot coins represent wealth and abundance. Wealth of spirit and joy, wealth of happiness and wealth of hope. This is the reminder I need going forward. We have so much to look forward to. 4 T unsalted butter

1 large onion, chopped

1 heaping tablespoon garam masala 1/8 teaspoon turmeric 1 large sweet potato, peeled and cubed 4 small white potatoes, cubed 1 cup chopped tomato 6 cups vegetable broth 2 cups spinach leaves 4 small carrots, peeled and cut into rounds 2 cups cooked black eyed peas, soaked overnight, simmered until soft, then drained 1 bunch kale, ribs removed, and sliced thin Salt and pepper to taste In a large saucepan melt the butter over medium-low heat. Add the onion, garam masala, turmeric and potatoes and stir to coat. Let cook for 4 minutes, stirring often and browning.

Add the chopped tomato and broth and bring to a simmer. Let cook for 10 minutes or until the potatoes are soft enough to be pierced with a knife.

Add the remaining ingredients, heat for 5 minutes, taste and serve.
